- 1 1/2 pounds steak (ribeye, sirloin, or New York strip)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 garlic cloves, smashed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 pounds Yukon gold potatoes, peeled and chopped
- 1/3 cup milk
- 3 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 ounces fresh green beans, trimmed
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup creamed spinach
- 2 tablespoons whole grain mustard
Instructions
- Pat the steak dry with paper towels.
- Season both sides of the steak with salt, black pepper, garlic powder, and onion powder.
- Bring a large pot of salted water to a boil. Add the chopped potatoes and cook for 15–18 minutes, or until fork-tender.
- Drain the potatoes, then mash with milk, butter, salt, and black pepper until creamy. Set aside and keep warm.
- Heat olive oil in a large skillet over medium-high heat.
- Add the steak and sear for 3–5 minutes per side, depending on thickness and desired doneness.
- Add the butter and smashed garlic to the skillet. Spoon the melted garlic butter over the steak for 1–2 minutes.
- Transfer the steak to a cutting board and let it rest for 8–10 minutes before slicing.
- While the steak rests, heat olive oil in another skillet over medium heat.
- Add the green beans, garlic, salt, and black pepper. Cook for 5–7 minutes, stirring often, until bright green and tender-crisp.
- Warm the creamed spinach in a small saucepan or microwave until hot.
- Slice the steak against the grain into thick strips.
- Serve the sliced steak with mashed potatoes, green beans, creamed spinach, and whole grain mustard.
