Description

A delicious and easy-to-make honey BBQ chicken drumsticks recipe served with mashed potatoes, gravy, corn, and carrots.


Ingredients

  • 8 chicken drumsticks
  • 2 tablespoons olive oil
  • ½ cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • 2 lb potatoes, peeled and chopped
  • 4 tablespoons butter
  • ½ cup milk or heavy cream
  • 1 cup brown gravy
  • 2 cups corn kernels
  • 4 large carrots, peeled and cut into thick sticks
  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Pat the chicken drumsticks dry with paper towels, then place them in a large bowl.
  3. Drizzle the chicken with olive oil, then season with garlic powder, onion powder, smoked paprika, salt, black pepper, and red pepper flakes if using.
  4. Arrange the drumsticks on a lined baking sheet and bake for 25 minutes.
  5. In a small bowl, mix together barbecue sauce, honey, and melted butter.
  6. Brush the chicken drumsticks generously with the honey BBQ glaze.
  7. Return the chicken to the oven and bake for another 15–20 minutes, brushing once more halfway through, until the chicken is glossy, caramelized, and reaches 165°F.
  8. While the chicken bakes, boil the potatoes in salted water for 15–18 minutes, or until fork-tender.
  9. Drain the potatoes, then mash with butter, milk or cream, salt, and black pepper until smooth and creamy.
  10. Steam or boil the carrots for 8–10 minutes until tender, then season lightly with butter, salt, and parsley.
  11. Warm the corn kernels in a small saucepan with a little butter, salt, and black pepper.
  12. Heat the brown gravy until warm.
  13. Serve the honey BBQ glazed chicken drumsticks with mashed potatoes, gravy, corn, and carrots. Garnish with chopped parsley.

Notes

  • You can adjust the amount of red pepper flakes for more or less heat.
  • For crispier skin, broil the chicken for the last 2–3 minutes.
  • Leftovers can be stored in an airtight container for up to 3 days.
