  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon paprika

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 4 cups cooked white rice
  • 1/3 cup hot sauce, plus more for serving
  • 1 tablespoon butter

Instructions

  1. Pat the chicken pieces dry with paper towels.
  2. Season the chicken with paprika, garlic powder, onion powder, chili powder, cumin, salt, black pepper, and lemon juice.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the chicken pieces in a single layer and cook for 5–6 minutes, stirring occasionally, until browned.
  5. Reduce the heat to medium and continue cooking for another 5–7 minutes, or until the chicken is fully cooked and tender.
  6. Add butter and 2 tablespoons of hot sauce to the skillet, then toss the chicken until coated and glossy.
  7. Divide the cooked white rice between 4 bowls.
  8. Spoon the spicy chicken over the rice.
  9. Drizzle extra hot sauce over the chicken and rice before serving.
