Description

Bakery-style double chocolate hazelnut muffins with a rich chocolate ganache topping.

Ingredients

Scale
  • 1¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ¾ cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • ½ cup sour cream
  • 1 cup semisweet chocolate chips
  • ½ cup chopped toasted hazelnuts
  • ¾ cup semisweet chocolate chips (for ganache)
  • ⅓ cup heavy cream (for ganache)
  • ⅓ cup chopped toasted hazelnuts (for topping)

Instructions

  1. Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners.
  2. Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk eggs, milk, vegetable oil, vanilla, and sour cream until smooth.
  4. Pour wet ingredients into dry ingredients and stir just until combined. Do not overmix.
  5. Fold in chocolate chips and chopped hazelnuts.
  6. Divide batter evenly among muffin cups, filling each three-quarters full.
  7. Bake for 18–22 minutes, or until a toothpick comes out with a few moist crumbs.
  8. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the ganache, place chocolate chips in a heat-safe bowl.
  10. Heat heavy cream until steaming, pour over chocolate, and let sit for 2 minutes.
  11. Stir until smooth and glossy, then drizzle over cooled muffins.
  12. Sprinkle with chopped hazelnuts and let ganache set before serving.

Notes

  • Toast hazelnuts for deeper flavor.
  • Do not overmix the batter to keep muffins tender.
  • Ganache sets quickly, so drizzle immediately after making.
