  • 6 bone-in chicken pieces (mix of thighs and drumsticks)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 12 ounces baby potatoes, halved
  • 8 ounces mushrooms, sliced
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups chicken broth
  • 3/4 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken dry with paper towels. Season both sides with salt, black pepper, paprika, and garlic powder.
  2. Heat the olive oil and butter in a large skillet or Dutch oven over medium-high heat.
  3. Add the chicken pieces and sear for 4 to 5 minutes per side until golden brown. Transfer to a plate.
  4. In the same pan, add the chopped onion and mushrooms. Cook for 4 to 5 minutes until softened.
  5. Stir in the garlic and cook for 30 seconds. Sprinkle in the flour and stir well for 1 minute.
  6. Slowly pour in the chicken broth, stirring to combine. Add the heavy cream, thyme, parsley, and oregano.
  7. Add the baby potatoes and stir gently. Return the chicken to the pan, nestling it into the sauce.
  8. Cover and simmer on low for 30 to 35 minutes, or until the chicken is cooked through and the potatoes are fork-tender.
  9. Spoon the creamy sauce over the chicken, garnish with fresh parsley, and serve warm.
