  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 tablespoon all-purpose flour
  • 1 tablespoon chopped fresh parsley
  • 2 cups long-grain white rice
  • 4 cups water
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 2 cups baby carrots
  • 2 cups green peas
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the white rice in water with butter and salt according to package directions until fluffy and tender.
  2. Season the chicken pieces with garlic powder, onion powder, paprika, dried parsley, salt, and black pepper.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side, until lightly golden. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add diced onion and minced garlic. Cook for 2–3 minutes until fragrant and softened.
  5. Sprinkle in the flour and stir for 1 minute to create a light roux.
  6. Slowly pour in the chicken broth while stirring, then add the heavy cream, Parmesan cheese, and Dijon mustard.
  7. Return the chicken to the skillet and simmer for 10–12 minutes, until the chicken is cooked through and the sauce is creamy and thickened.
  8. Steam or boil the baby carrots until tender, about 8–10 minutes. Warm the peas with butter, salt, and black pepper.
  9. Serve the creamy garlic chicken with fluffy white rice, green peas, and baby carrots. Garnish with chopped parsley.
