Description

A rich and decadent chocolate peanut butter layer cake with moist chocolate sponge and creamy peanut butter frosting.

Ingredients

Scale
  • Chocolate Cake:
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water
  • Peanut Butter Frosting:
  • 1 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 34 tablespoons heavy cream or milk
  • 1/4 teaspoon salt
  • Topping:
  • 1/2 cup chocolate cake crumbs

Instructions

  1. Preheat oven to 350°F.
  2. Grease and line two 9-inch round cake pans with parchment paper.
  3. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  4. Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth.
  5. Slowly pour in the hot coffee or hot water and mix until the batter is thin and well combined.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. To make the frosting, beat softened butter and peanut butter together until creamy and smooth.
  10. Add powdered sugar, vanilla extract, heavy cream, and salt. Beat until fluffy, adding more cream if needed for a spreadable texture.
  11. Place one cooled chocolate cake layer on a serving plate. Spread a thick layer of peanut butter frosting over the top.
  12. Add the second cake layer and frost the top with more peanut butter frosting.
  13. Sprinkle chocolate cake crumbs over the frosting.
  14. Slice and serve.

Notes

  • Use room-temperature ingredients for best results.
  • Hot coffee enhances the chocolate flavor, but hot water can be substituted.
  • Adjust frosting consistency with more cream or powdered sugar as needed.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
