- 4 cups chopped romaine lettuce
- 1 cup chopped cucumber
- 1 cup corn kernels, cooked and cooled
- 1/4 cup creamy ranch dressing, plus more for drizzling
- 1 tablespoon chopped fresh parsley, optional
Instructions
- Pat the chicken breast dry with paper towels.
- Season the chicken with olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
- Heat a skillet or grill pan over medium-high heat.
- Cook the chicken for 5–6 minutes per side, or until golden brown and cooked through.
- Transfer the chicken to a cutting board and let it rest for 5 minutes.
- Slice or chop the chicken into bite-sized pieces.
- Add the chopped romaine lettuce to a large serving bowl.
- Arrange the chopped cucumber, corn kernels, and cooked chicken in sections over the lettuce.
- Drizzle creamy ranch dressing over the chicken, corn, cucumber, and greens.
- Garnish with chopped fresh parsley, if desired, and serve right away.
