A fresh and protein-packed balsamic chicken Caprese salad with mozzarella, tomatoes, avocado, and basil.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 cups arugula or mixed greens
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup mini mozzarella balls
  • 1 large avocado, sliced
  • 1/4 cup fresh basil leaves, plus extra chopped basil for garnish
  • 3 tablespoons balsamic glaze
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon balsamic vinegar (for dressing)
  • 1 teaspoon honey (for dressing)
  • 1/4 teaspoon salt (for dressing)
  • 1/4 teaspoon black pepper (for dressing)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Rub the chicken with olive oil, Italian seasoning, garlic powder, salt, and black pepper.
  3. Heat a grill pan or skillet over medium-high heat.
  4. Cook the chicken for 5 to 6 minutes per side, or until fully cooked and nicely browned.
  5. Transfer the chicken to a cutting board and let it rest for 5 minutes.
  6. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, salt, and black pepper for the dressing.
  7. Add the arugula or mixed greens to a large serving bowl.
  8. Arrange the cherry tomatoes, mozzarella balls, avocado slices, and fresh basil around the bowl.
  9. Slice the cooked chicken and place it over the salad.
  10. Drizzle the balsamic dressing over the salad.
  11. Finish with balsamic glaze and chopped fresh basil before serving.
