- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 5 cups arugula or mixed greens
- 1 1/2 cups cherry tomatoes, halved
- 1 cup mini mozzarella balls
- 1 large avocado, sliced
- 1/4 cup fresh basil leaves, plus extra chopped basil for garnish
- 3 tablespoons balsamic glaze
- 2 tablespoons extra virgin olive oil (for dressing)
- 1 tablespoon balsamic vinegar (for dressing)
- 1 teaspoon honey (for dressing)
- 1/4 teaspoon salt (for dressing)
- 1/4 teaspoon black pepper (for dressing)
Instructions
- Pat the chicken breasts dry with paper towels.
- Rub the chicken with olive oil, Italian seasoning, garlic powder, salt, and black pepper.
- Heat a grill pan or skillet over medium-high heat.
- Cook the chicken for 5 to 6 minutes per side, or until fully cooked and nicely browned.
- Transfer the chicken to a cutting board and let it rest for 5 minutes.
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, salt, and black pepper for the dressing.
- Add the arugula or mixed greens to a large serving bowl.
- Arrange the cherry tomatoes, mozzarella balls, avocado slices, and fresh basil around the bowl.
- Slice the cooked chicken and place it over the salad.
- Drizzle the balsamic dressing over the salad.
- Finish with balsamic glaze and chopped fresh basil before serving.

- Let the chicken rest before slicing to keep it juicy.
