Ingredients

- 1 cup cooked barley
- 2 cups roasted mixed vegetables (carrots, beets, parsnips)
- 1/2 cup feta cheese, crumbled
- 1/4 cup pumpkin seeds
- 2 tbsp balsamic vinegar
- Olive oil, salt, and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss mixed vegetables with olive oil, salt, and pepper. Roast for 30 minutes.
- In a large bowl, combine cooked barley, roasted vegetables, feta, and pumpkin seeds.
- Drizzle with balsamic vinegar and toss to combine.

- Toast pumpkin seeds for extra crunch if desired.
