Delicious vanilla strawberry cupcakes topped with whipped frosting and fresh strawberries.

- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 ½ teaspoons vanilla extract
- ¾ cup whole milk
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Fresh strawberries
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F and line a muffin pan with cupcake liners.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well. Stir in vanilla extract.
- Alternate adding dry ingredients and milk, mixing until just combined.
- Fill cupcake liners about ⅔ full.
- Bake for 18–22 minutes until a toothpick inserted comes out clean. Cool completely.
- Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Pipe frosting onto cooled cupcakes.
- Top with fresh strawberries and lightly dust with powdered sugar.
Notes
- Use room temperature ingredients for best results.
- Do not overmix the batter.
- Store cupcakes in the refrigerator if not serving immediately.
