Description

A hearty Tex-Mex casserole with a savory ground beef filling topped with a cheesy cornbread layer.


Ingredients

  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef (80/20 or 85/15)
  • 1 (1 oz) packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup beef broth (or water)
  • 1 (8 oz) can tomato sauce
  • 1 (4 oz) can diced green chiles
  • 1 cup corn kernels (canned/drained or frozen)
  • 1 cup shredded cheddar cheese (for the top)
  • Salt & black pepper, to taste
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar (optional)
  • 1 cup milk (or buttermilk)
  • 2 large eggs
  • 1/3 cup melted butter
  • Optional toppings: sour cream, diced tomatoes, sliced green onions, chopped cilantro

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium-high heat. Add onion and cook 3–4 minutes.
  3. Add garlic and cook 30 seconds.
  4. Add ground beef and cook until browned. Drain excess grease if needed.
  5. Stir in taco seasoning, broth, tomato sauce, and green chiles. Simmer 3–5 minutes.
  6. Stir in corn and spread mixture into the baking dish.
  7. In a bowl, whisk cornmeal, flour, baking powder, salt, and sugar.
  8. In another bowl, whisk milk, eggs, and melted butter.
  9. Pour wet ingredients into dry and stir until combined.
  10. Spoon batter over the filling and spread to cover.
  11. Sprinkle cheddar cheese on top.
  12. Bake 20–25 minutes until golden and set.
  13. Cool 5–10 minutes before slicing.
  14. Serve with optional toppings.

Notes

  • Use lean ground beef to reduce excess grease.
  • Substitute buttermilk for a richer cornbread topping.
  • Add jalapeños for extra heat.
