A refreshing and healthy summer salad combining watermelon, strawberries, cucumber, and fresh mint with a light lime-honey dressing.
Ingredients

- 2 cups watermelon, cut into small cubes
- 2 cups strawberries, hulled and halved
- 1 1/2 cups cucumber, chopped into bite-sized pieces
- 2 tablespoons fresh mint, chopped
- 2 tablespoons red onion, finely diced
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 1/8 teaspoon sea salt
- 1/8 teaspoon black pepper
Instructions
- Add the watermelon, strawberries, cucumber, mint, and red onion to a large mixing bowl.
- In a small bowl, whisk together the lime juice, honey, sea salt, and black pepper.
- Pour the dressing over the fruit and cucumber mixture.
- Gently toss until everything is evenly coated.
- Chill for 10 to 15 minutes if desired, then serve cold.
