Description

A refreshing and healthy summer salad combining watermelon, strawberries, cucumber, and fresh mint with a light lime-honey dressing.


Ingredients

  • 2 cups watermelon, cut into small cubes
  • 2 cups strawberries, hulled and halved
  • 1 1/2 cups cucumber, chopped into bite-sized pieces
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  1. Add the watermelon, strawberries, cucumber, mint, and red onion to a large mixing bowl.
  2. In a small bowl, whisk together the lime juice, honey, sea salt, and black pepper.
  3. Pour the dressing over the fruit and cucumber mixture.
  4. Gently toss until everything is evenly coated.
  5. Chill for 10 to 15 minutes if desired, then serve cold.
