- 6 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- ¾ cup barbecue sauce
- 1 tbsp honey
- 1 tbsp soy sauce
- 1½ lbs baby yellow potatoes
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ cup shredded mozzarella or parmesan cheese
- 1 tbsp fresh parsley or chives, chopped
Instructions
- Preheat oven to 400°F.
- Season chicken thighs with salt, black pepper, paprika, and garlic powder.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken skin-side down until golden, about 4–5 minutes. Flip and cook 2 minutes more.
- In a small bowl, mix barbecue sauce, honey, and soy sauce. Brush generously over chicken.
- Transfer skillet to the oven and bake for 25–30 minutes until chicken is cooked through and sticky.
- Meanwhile, boil potatoes in salted water until fork-tender, about 15 minutes. Drain and place on a baking sheet.
- Smash potatoes gently, drizzle with olive oil, and season with salt, black pepper, and garlic powder.
- Bake potatoes alongside chicken for 20–25 minutes until crispy.
- Sprinkle cheese over potatoes and return to oven for 5 minutes until melted.
- Garnish chicken and potatoes with fresh herbs and serve hot.
