  • 1 cup chopped spinach (fresh)
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup almond flour
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for browning)
  • 1/2 cup sugar-free marinara (for serving, optional)
  • Chopped parsley or basil (optional, for garnish)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, spinach, garlic, Parmesan, almond flour, egg, Italian seasoning, salt, and pepper. Mix until just combined.
  3. Roll into 16 meatballs (about 1 1/2 inches each).
  4. Heat olive oil in a skillet over medium-high heat. Brown meatballs for 2–3 minutes per side until golden.
  5. Transfer meatballs to the baking sheet and bake 10–12 minutes until cooked through (165°F internal temp).
  6. Serve warm with sugar-free marinara and garnish with herbs if desired.
