Description

A quick and easy spicy California sushi bowl with imitation crab, avocado, cucumber, and a spicy mayo drizzle.


Ingredients

  • 1 cup sushi rice (uncooked)
  • 1 1/4 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp granulated sugar
  • 1/2 tsp kosher salt
  • 8 oz imitation crab (or cooked crab), chopped
  • 1/2 cup cucumber, sliced or chopped
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 1 tbsp black sesame seeds
  • 1 tbsp white sesame seeds
  • 2 tbsp tobiko or masago (optional)
  • 1/4 cup mayonnaise
  • 1 1/2 tbsp sriracha (more to taste)
  • 1 tsp soy sauce
  • 1 tsp sesame oil (optional)

Instructions

  1. Rinse sushi rice until water runs mostly clear. Cook rice with water (rice cooker or stovetop).
  2. In a small bowl, stir rice vinegar, sugar, and salt until dissolved. Fold into warm rice and let cool 5–10 minutes.
  3. Mix spicy mayo: whisk mayo, sriracha, soy sauce, and sesame oil (if using) until smooth.
  4. Assemble bowls: divide sushi rice into 4 bowls. Top with chopped crab, cucumber, and avocado.
  5. Drizzle with spicy mayo. Sprinkle with green onions, black sesame seeds, white sesame seeds, and tobiko/masago (optional). Serve immediately.
