Description
A hearty and spicy beef stew served with crispy fries and fresh slaw for a complete meal.

- 2 lbs beef stew meat, cut into chunks
- 3 tbsp vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup crushed tomatoes
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp chili powder
- ½ tsp cayenne pepper (optional)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 4 large russet potatoes, peeled and cut into fries
- Vegetable oil for frying
- Salt, to taste
- 1 cup shredded cabbage
- ½ cup shredded carrots
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt, to taste

Instructions
- Heat vegetable oil in a large pot over medium-high heat.
- Add beef chunks and brown on all sides. Remove and set aside.
- In the same pot, add onion and cook until softened, about 4 minutes.
- Stir in garlic and bell pepper, cooking for 1 minute.
- Add crushed tomatoes, tomato paste, beef broth, paprika, chili powder, cayenne, salt, black pepper, and thyme.
- Return beef to the pot and stir to combine.
- Cover and simmer on low heat for 45–60 minutes until beef is tender and sauce is thick.
- Meanwhile, heat oil in a deep pan and fry potatoes until golden and crispy. Drain and season with salt.
- Toss cabbage and carrots with olive oil, lemon juice, and salt to make the slaw.
- Serve beef stew with crispy fries, fresh slaw, and a lemon wedge on the side.
Notes
- Adjust cayenne pepper for desired spice level.
- For crispier fries, soak potatoes in cold water for 30 minutes before frying.
