Spicy Beef Stew Recipe That Warms Your Soul in 60 Minutes

Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 3 tbsp vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp cayenne pepper (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 4 large russet potatoes, peeled and cut into fries
  • Vegetable oil for frying
  • Salt, to taste
  • 1 cup shredded cabbage
  • ½ cup shredded carrots
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt, to taste
  • Lemon slices

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat.
  2. Add beef chunks and brown on all sides. Remove and set aside.
  3. In the same pot, add onion and cook until softened, about 4 minutes.
  4. Stir in garlic and bell pepper, cooking for 1 minute.
  5. Add crushed tomatoes, tomato paste, beef broth, paprika, chili powder, cayenne, salt, black pepper, and thyme.
  6. Return beef to the pot and stir to combine.
  7. Cover and simmer on low heat for 45–60 minutes until beef is tender and sauce is thick.
  8. Meanwhile, heat oil in a deep pan and fry potatoes until golden and crispy. Drain and season with salt.
  9. Toss cabbage and carrots with olive oil, lemon juice, and salt to make the slaw.
  10. Serve beef stew with crispy fries, fresh slaw, and a lemon wedge on the side.

Notes

  • Adjust cayenne pepper for desired spice level.
  • For crispier fries, soak potatoes in cold water for 30 minutes before frying.
