Description

Soy marinated eggs, also known as ajitsuke tamago, are a simple yet flavorful dish perfect for meal prep. These jammy soft-boiled eggs are soaked in a savory-sweet soy marinade with a hint of spice, served over warm rice for an easy meal.

  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil (optional)
  • 12 tsp chili flakes or chili crisp (plus more for serving)
  • 2 cups cooked white rice (for serving)
  • Optional toppings: chili crisp, sesame seeds, chopped green onion

Instructions

  1. Soft-boil the eggs: Bring a pot of water to a gentle boil. Carefully add eggs and boil 7 minutes for jammy centers.
  2. Ice bath: Transfer eggs to an ice bath for 5 minutes, then peel.
  3. Make the marinade: In a bowl, whisk soy sauce, water, brown sugar, rice vinegar, sesame oil (if using), and chili flakes/chili crisp.
  4. Marinate: Add peeled eggs to the marinade (they should be mostly submerged). Cover and refrigerate 4–12 hours (overnight is best), turning once if needed.
  5. Serve: Spoon warm rice into bowls. Top with marinated eggs (whole or halved) and drizzle with a little marinade. Finish with chili crisp and toppings.
