  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups peeled and diced sweet potato
  • 1 cup uncooked long-grain white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chiles
  • 2 cups vegetable broth
  • 1 cup shredded Mexican-blend cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 avocado, sliced, for serving
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a large skillet with a lid over medium heat. Add the onion and red bell pepper and cook for 3 to 4 minutes, until softened.
  2. Stir in the garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 30 seconds, until fragrant.
  3. Add the diced sweet potato and uncooked rice. Stir well so the rice and sweet potatoes get coated in the seasonings.
  4. Add the black beans, diced tomatoes with green chiles, and vegetable broth. Stir everything together and bring to a gentle boil.
  5. Reduce the heat to low, cover, and simmer for 18 to 22 minutes, or until the rice is tender and the sweet potatoes are soft.
  6. Remove the lid and fluff the mixture gently with a fork. Sprinkle the cheese over the top, cover again, and let it sit for 2 to 3 minutes until the cheese is melted.
  7. Top with chopped cilantro, avocado slices, and a squeeze of fresh lime before serving.
