Description

A healthy and protein-packed breakfast featuring smoked salmon, avocado, and a jammy egg on toasted bread.

Ingredients

Scale
  • 2 slices sourdough or artisan bread
  • 2 tablespoons cream cheese
  • ½ ripe avocado, diced
  • 3 oz smoked salmon
  • 1 large egg
  • 2 tablespoons red onion, thinly sliced
  • 1 tablespoon fresh chives, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Toast bread slices until golden and crisp.
  2. Bring a small pot of water to a gentle simmer and cook egg for 6–7 minutes for a jammy yolk. Transfer to ice water, then peel.
  3. Spread cream cheese evenly over toasted bread.
  4. Top with diced avocado and smoked salmon.
  5. Add red onion slices and place the soft egg on top, cutting slightly to let the yolk run.
  6. Season with salt and black pepper.
  7. Garnish with chopped chives and serve immediately.

Notes

  • Use fresh, high-quality smoked salmon for best flavor.
  • Adjust egg cooking time for desired yolk consistency.
