Description
A warm and gooey skillet oatmeal chocolate chip cookie topped with vanilla ice cream and hot fudge sauce.

- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1 1/4 cups old-fashioned rolled oats
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon (optional)
- 3/4 cup semi-sweet chocolate chips (plus extra for topping)
- 2 scoops vanilla ice cream
- 1/4 cup hot fudge sauce (store-bought or homemade)
Instructions
- Preheat oven to 350°F. Lightly grease a 6–8 inch cast-iron skillet (or oven-safe skillet).
- In a bowl, cream together butter, brown sugar, and granulated sugar until smooth. Mix in egg and vanilla.
- Add flour, oats, baking soda, salt, and cinnamon (if using). Stir just until combined. Fold in chocolate chips.
- Press dough evenly into the skillet. Sprinkle a few extra chocolate chips on top.
- Bake 16–20 minutes until the edges are golden and the center is set but still slightly soft.
- Let cool 5 minutes. Top with vanilla ice cream and drizzle with hot fudge. Serve warm.
Notes
- Use a cast-iron skillet for even baking.
- For extra gooeyness, slightly underbake the cookie.
- Serve immediately for the best texture.
