Ingredients

  • 4 cups cooked long-grain rice
  • 1 lb medium shrimp, peeled and deveined
  • 1 lb chicken pieces (drumsticks or mixed cuts)
  • ½ cup vegetable oil (for frying chicken)
  • 2 tablespoons vegetable oil (for rice)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ cup red bell pepper, diced
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)

Instructions

  1. Season chicken pieces with salt, black pepper, and paprika.
  2. Heat vegetable oil in a deep pan and fry chicken until golden brown and fully cooked. Remove and set aside.
  3. Heat 2 tablespoons oil in a large skillet over medium heat.
  4. Add onion and garlic, sauté until fragrant.
  5. Add shrimp and cook for 2–3 minutes until pink.
  6. Stir in red bell pepper and cooked rice.
  7. Add soy sauce, salt, and black pepper. Toss until well combined and heated through.
  8. Finish with sliced green onions and remove from heat.
  9. Serve shrimp fried rice alongside crispy fried chicken.
