  • 16 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and line a muffin pan with cupcake liners.
  2. In a large bowl, whisk flour, sugar, baking soda, salt, and cocoa powder.
  3. Add vegetable oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Mix until smooth.
  4. Divide batter evenly into cupcake liners, filling about ⅔ full.
  5. Bake for 18–22 minutes until a toothpick inserted comes out clean. Cool completely.
  6. Beat cream cheese and butter until smooth.
  7. Gradually add powdered sugar and vanilla, beating until fluffy.
  8. Frost cooled cupcakes and garnish with red velvet crumbs if desired.
