A simple and flavorful one-pot chicken and rice dish that’s perfect for a family dinner.


Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs, cut into large chunks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups long grain white rice, rinsed
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper, optional
  • 2 3/4 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken with salt, black pepper, paprika, garlic powder, onion powder, and dried thyme.
  2. Heat the olive oil in a large deep skillet or braiser over medium-high heat.
  3. Add the chicken pieces and cook for 5 to 6 minutes, turning until browned on all sides. Remove the chicken and set aside.
  4. In the same pan, add the sliced onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds.
  5. Add the rinsed rice, tomato paste, smoked paprika, oregano, and cayenne pepper. Stir well so the rice gets coated in the seasonings.
  6. Pour in the chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.
  7. Return the chicken to the skillet and nestle the pieces into the rice.
  8. Bring everything to a gentle boil, then reduce the heat to low. Cover tightly and cook for 20 to 25 minutes, until the rice is tender and the liquid is absorbed.
  9. Turn off the heat and let the skillet rest, covered, for 5 minutes.
  10. Fluff the rice gently with a fork, sprinkle with fresh parsley, and serve warm.

Notes

  • For extra flavor, you can use bone-in chicken thighs and adjust cooking time.
  • Leftovers store well in the fridge for up to 3 days.
