Description

Ingredients

  • ½ cup brown sugar, packed
  • 1 tsp vanilla extract
  • 3 cups rolled oats
  • 1 cup semi-sweet or dark chocolate chips
  • ½ cup peanut butter

Instructions

  1. Make the Oat Base: In a saucepan over medium heat, melt butter and brown sugar, stirring until smooth. Remove from heat and stir in vanilla and rolled oats.
  2. Layer the Bottom: Press half of the oat mixture firmly into a parchment-lined 8×8-inch pan.
  3. Prepare the Chocolate Filling: Melt chocolate chips and peanut butter together (microwave in 30-second intervals or use a double boiler). Spread evenly over the oat base.
  4. Finish the Bars: Crumble or press remaining oat mixture over the chocolate layer.
  5. Chill & Slice: Refrigerate for 1–2 hours until set. Slice into bars and enjoy.
