Easy no-bake oatmeal chocolate bars with peanut butter filling, ready in under 15 minutes.

- 1 cup unsalted butter
- ½ cup brown sugar, packed
- 1 tsp vanilla extract
- 3 cups rolled oats
- 1 cup semi-sweet or dark chocolate chips
- ½ cup peanut butter
Instructions
- Make the Oat Base: In a saucepan over medium heat, melt butter and brown sugar, stirring until smooth. Remove from heat and stir in vanilla and rolled oats.
- Layer the Bottom: Press half of the oat mixture firmly into a parchment-lined 8×8-inch pan.
- Prepare the Chocolate Filling: Melt chocolate chips and peanut butter together (microwave in 30-second intervals or use a double boiler). Spread evenly over the oat base.
- Finish the Bars: Crumble or press remaining oat mixture over the chocolate layer.
- Chill & Slice: Refrigerate for 1–2 hours until set. Slice into bars and enjoy.
Notes
- Store in an airtight container in the fridge for up to 1 week.
- For firmer bars, chill longer.
- Substitute almond butter if preferred.
