Description

Ingredients

  • Blueberry Chia Filling: 2 cups blueberries, 1/4 cup maple syrup, 2 tbsp lemon juice, 1 tsp lemon zest, 1/2 tsp vanilla extract, 1/2 cup chia seeds, 1/2 cup milk
  • Toppings (optional): Fresh blueberries, lemon slices, edible flowers or mint

Instructions

  1. Mix graham cracker crumbs, melted butter, maple syrup, and salt. Press into a pie dish and chill.
  2. Cook blueberries, maple syrup, and lemon juice until jammy.
  3. Blend blueberry mixture with vanilla and zest until smooth.
  4. Stir in chia seeds and milk. Let sit to thicken.
  5. Pour filling into crust and chill for 4 hours.
  6. Top with berries and serve.
