A flavorful one-pan meal featuring tender lemon garlic chicken thighs served over spinach-infused rice.

- 4 boneless, skinless chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 cup long grain white rice
- 2 cups chicken broth
- 2 cups fresh spinach, chopped
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 4 lemon slices, for garnish
Instructions
- Pat the chicken thighs dry and season both sides with salt, black pepper, garlic powder, and paprika.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken and cook for 5 to 6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt the butter and cook the diced onion for 2 to 3 minutes until softened.
- Stir in the garlic and cook for 30 seconds.
- Add the rice and stir for 1 minute to lightly toast it.
- Pour in the chicken broth, then add the dried thyme and red pepper flakes.
- Bring to a simmer, cover, and cook on low for 15 minutes.
- Stir in the chopped spinach, lemon juice, and lemon zest until the spinach wilts into the rice.
- Return the chicken to the skillet or serve it over the spinach rice.
- Garnish with lemon slices and extra red pepper flakes, then serve warm.
Notes
- Use fresh lemon juice for best flavor.
- Adjust red pepper flakes to taste.
- Substitute kale for spinach if preferred.
