  • 12 ounces smoked sausage or Korean-style sausage, sliced on the diagonal
  • 1 tablespoon neutral oil
  • 1 cup kimchi, roughly chopped
  • 4 soft-boiled eggs, halved
  • 2 green onions, sliced
  • 2 cloves garlic, finely chopped
  • 1 small green chili, thinly sliced
  • 1 small red chili, thinly sliced
  • 1 teaspoon sesame seeds
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar

Instructions

  1. Cook the white rice and keep it warm.
  2. In a small bowl, stir together the soy sauce, sesame oil, and honey or brown sugar.
  3. Heat the neutral oil in a skillet over medium-high heat.
  4. Add the sliced sausage and cook for 4 to 5 minutes, turning occasionally, until browned and lightly charred on the edges.
  5. Add the chopped garlic to the pan and cook for 30 seconds.
  6. Stir in the sauce mixture and toss the sausage until glossy and coated.
  7. Warm the kimchi in the skillet for 1 to 2 minutes, or serve it as is for a fresher bite.
  8. Divide the warm rice between bowls.
  9. Top with the glazed sausage, kimchi, and halved soft-boiled eggs.
  10. Finish with sliced green onions, green chili, red chili, and sesame seeds.
  11. Serve immediately.
