Ingredients

  • For the chicken skewers:
    • 1 1/2 pounds boneless skinless chicken thighs, cut into chunks
    • 1/2 cup plain Greek yogurt
    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • 3 cloves garlic, minced
    • 1 teaspoon paprika
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon chili powder
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 tablespoons chopped parsley or cilantro
  • For the seasoned rice:
    • 2 tablespoons olive oil
    • 1 small yellow onion, finely chopped
    • 2 cloves garlic, minced
    • 1 1/2 cups long-grain basmati rice, rinsed
    • 2 3/4 cups chicken broth
    • 1 teaspoon paprika
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 cup diced red bell pepper
    • 2 tablespoons chopped parsley

Instructions

  1. In a large bowl, combine the Greek yogurt, olive oil, lemon juice, garlic, paprika, cumin, coriander, turmeric, chili powder, salt, black pepper, and parsley.
  2. Add the chicken pieces and toss until fully coated. Cover and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Thread the marinated chicken onto skewers.
  4. To make the rice, heat the olive oil in a large skillet or saucepan over medium heat. Add the onion and cook for 3 to 4 minutes until softened.
  5. Stir in the garlic and cook for 30 seconds.
  6. Add the rice, paprika, turmeric, cumin, salt, and black pepper. Stir well to coat the rice in the seasonings.
  7. Pour in the chicken broth and add the diced red bell pepper. Bring to a boil, then reduce the heat to low, cover, and cook for 15 to 18 minutes until the rice is tender and the liquid is absorbed.
  8. Remove the rice from the heat, let it sit covered for 5 minutes, then fluff with a fork and stir in the parsley.
  9. While the rice cooks, grill the chicken skewers over medium-high heat for 10 to 12 minutes, turning occasionally, until lightly charred and cooked through. You can also cook them in a grill pan or under the broiler.
  10. Serve the grilled chicken skewers over the seasoned rice and garnish with extra parsley.
