- 2 lbs boneless, skinless chicken thighs
- 1/3 cup olive oil
- 4–5 cloves garlic, minced
- 1 tbsp lemon juice (or 2 tbsp apple cider vinegar)
- 1 tsp dried oregano
- 1 tsp dried basil (or Italian seasoning)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 1 tsp Dijon mustard (optional, adds flavor)
Instructions
- Make marinade: In a bowl, whisk olive oil, garlic, lemon juice (or vinegar), oregano, basil/Italian seasoning, salt, pepper, paprika, and Dijon (if using).
- Marinate chicken: Add chicken thighs and toss until coated. Cover and marinate 30 minutes to 8 hours (even 15 minutes helps).
- Bake: Preheat oven to 400°F. Arrange chicken in a baking dish and pour marinade over the top.
- Bake 25–30 minutes (boneless) or 35–40 minutes (bone-in) until the thickest piece hits 165°F.
- Optional browning: Broil 2–3 minutes at the end for more color.
- Serve: Spoon the garlicky pan juices over the chicken. Great with rice, roasted potatoes, or a simple salad.
