- 1 pound boneless skinless chicken breast, cut into bite-size pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 small shallot, finely diced
- 1 1/2 cups heavy cream
- 3/4 cup chicken broth
- 1 cup freshly grated Parmesan cheese
- 1 pound potato gnocchi
- 2 cups baby spinach
- 1/4 teaspoon red pepper flakes, optional
- 2 tablespoons chopped fresh basil, plus more for garnish
- Extra Parmesan, for serving
Instructions
- Season the chicken with salt, black pepper, garlic powder, and Italian seasoning.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes, stirring occasionally, until golden and cooked through. Transfer the chicken to a plate.
- In the same skillet, melt the butter. Add the garlic and shallot and cook for 1 minute, just until fragrant.
- Pour in the heavy cream and chicken broth. Stir well and bring to a gentle simmer.
- Add the Parmesan cheese and stir until melted into the sauce.
- Add the gnocchi directly to the skillet. Cover and cook for 4 to 5 minutes, stirring once or twice, until the gnocchi is tender and the sauce starts to thicken.
- Stir in the spinach, red pepper flakes if using, and chopped basil.
- Return the chicken to the skillet and toss everything together until coated in the creamy garlic sauce.
- Let it cook for 1 to 2 more minutes, until hot and thickened.
- Top with extra Parmesan and fresh basil before serving.
