Easy homemade oatmeal bars with a jam filling and crumble topping.

- 1 cup (2 sticks) unsalted butter, melted
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 cups old-fashioned rolled oats
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 1/4 to 1 1/2 cups jam or preserves (raspberry, strawberry, blackberry, or your favorite)
Instructions
- Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper (leave overhang for easy lifting).
- In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Stir in vanilla.
- Add oats, flour, baking powder, baking soda, and salt. Mix until crumbly but holds together when pressed.
- Press about 2/3 of the mixture firmly into the prepared pan to form the bottom crust.
- Spread the jam evenly over the crust, leaving a tiny border around the edges.
- Sprinkle the remaining oat mixture over the jam and gently press very lightly so it adheres.
- Bake 25–30 minutes, until the top is golden brown.
- Cool completely (for clean slices, chill 30–60 minutes). Lift out using parchment, slice into bars, and enjoy.
Notes
- Use any jam or preserves you prefer.
- Chilling before slicing helps keep the bars neat.
