Easy homemade oatmeal bars with a jam filling and crumble topping.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 1/4 to 1 1/2 cups jam or preserves (raspberry, strawberry, blackberry, or your favorite)

Instructions

  1. Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper (leave overhang for easy lifting).
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Stir in vanilla.
  3. Add oats, flour, baking powder, baking soda, and salt. Mix until crumbly but holds together when pressed.
  4. Press about 2/3 of the mixture firmly into the prepared pan to form the bottom crust.
  5. Spread the jam evenly over the crust, leaving a tiny border around the edges.
  6. Sprinkle the remaining oat mixture over the jam and gently press very lightly so it adheres.
  7. Bake 25–30 minutes, until the top is golden brown.
  8. Cool completely (for clean slices, chill 30–60 minutes). Lift out using parchment, slice into bars, and enjoy.
