Instructions

  1. Make the crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar until it looks like wet sand. Spoon about 1–2 tablespoons into each mini cup and press down gently.
  2. Make the filling: Beat cream cheese until smooth. Add powdered sugar and vanilla and mix until creamy. Fold in whipped topping (or whipped cream) until light and fluffy.
  3. Assemble: Pipe or spoon cheesecake filling over the crust (about 2–3 tablespoons per cup).
  4. Top: Spoon cherry pie filling on top of each cup.
  5. Chill: Refrigerate at least 2 hours (best overnight) until set. Serve cold.
