- 12 oz bow-tie (farfalle) pasta
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, thinly sliced
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup vegetable broth
- ¾ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil and butter in a large skillet over medium heat.
- Add sliced onions and cook for 4–5 minutes until soft and lightly caramelized.
- Add mushrooms and cook for 5–6 minutes until browned and tender.
- Stir in garlic and cook for 30 seconds until fragrant.
- Pour in vegetable broth and heavy cream. Simmer for 3–4 minutes until slightly thickened.
- Add Parmesan cheese, salt, pepper, and red pepper flakes. Stir until smooth.
- Add spinach and cook until wilted.
- Toss cooked pasta into the sauce until fully coated. Serve warm.
Notes
- Use fresh mushrooms for the best flavor.
- Adjust the amount of red pepper flakes based on your spice preference.
- Store leftovers in an airtight container for up to 3 days.
