  • Cilantro Lime Sauce:
    • ½ cup sour cream
    • ½ cup fresh cilantro
    • 2 cloves garlic
    • Juice of 2 limes
    • 2 tbsp olive oil
    • Salt, to taste

Instructions

  1. Season chicken thighs with salt, pepper, paprika, and cumin.
  2. Heat olive oil in a skillet or grill pan over medium-high heat.
  3. Cook chicken for 5–6 minutes per side until charred and fully cooked.
  4. In a blender, combine sour cream, cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth.
  5. Spoon cooked rice into bowls.
  6. Top with sliced chicken thighs and drizzle generously with cilantro lime sauce.
  7. Garnish with extra cilantro and serve with lime wedges.
