- 6 boneless skinless chicken thighs
- Salt and black pepper, to taste
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tbsp olive oil
- 1 cup cooked white rice
- Cilantro Lime Sauce:
- ½ cup sour cream
- ½ cup fresh cilantro
- 2 cloves garlic
- Juice of 2 limes
- 2 tbsp olive oil
- Salt, to taste
Instructions
- Season chicken thighs with salt, pepper, paprika, and cumin.
- Heat olive oil in a skillet or grill pan over medium-high heat.
- Cook chicken for 5–6 minutes per side until charred and fully cooked.
- In a blender, combine sour cream, cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth.
- Spoon cooked rice into bowls.
- Top with sliced chicken thighs and drizzle generously with cilantro lime sauce.
- Garnish with extra cilantro and serve with lime wedges.

- Use Greek yogurt instead of sour cream for a lighter sauce.
- Adjust lime juice and salt to taste.
