Description

A rich and gooey chocolate-stuffed cookie cake with a melty center, perfect for dessert lovers.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups chocolate chunks (or chopped chocolate), divided
  • 1 cup chocolate spread (like Nutella) or 1 cup chocolate ganache (for the gooey center)

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch springform pan (or deep 9-inch cake pan) and line the bottom with parchment.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Mix in eggs one at a time, then stir in vanilla.
  4. Add dry ingredients to wet ingredients and mix just until combined. Fold in 1 cup chocolate chunks.
  5. Press half the dough into the bottom of the pan.
  6. Spread chocolate spread/ganache over the dough, leaving a 1/2-inch border around the edges.
  7. Add the remaining dough on top (pinch and flatten pieces to cover), then sprinkle the top with the remaining 1/2 cup chocolate chunks.
  8. Bake 22–28 minutes, until the edges are set but the center is still slightly soft (it will finish setting as it cools).
  9. Cool 20–30 minutes before slicing for the gooey center. Serve warm for maximum melt.

Notes

  • Use a springform pan for easy removal.
  • For a firmer center, refrigerate before slicing.
  • Store leftovers in an airtight container for up to 3 days.
