Description
Delicious chocolate strawberry cupcakes topped with vanilla buttercream and fresh strawberries dipped in chocolate.
Ingredients

- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup granulated sugar
- 1/2 cup buttermilk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup hot coffee or hot water
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 2 teaspoons vanilla extract
- 2 to 3 tablespoons heavy cream
- Pinch of salt
- 12 fresh strawberries
- 1 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil or vegetable oil
- 1/4 cup melted chocolate, for drizzle
Instructions
- Preheat your oven to 350°F and line a 12-cup muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and sugar.
- In a separate bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Slowly mix in the hot coffee or hot water until the batter is smooth.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely.
- Melt the chocolate chips with the coconut oil until smooth. Dip each strawberry halfway into the melted chocolate and place on parchment paper until set.
- For the buttercream, beat the butter until creamy. Add the powdered sugar, vanilla extract, salt, and heavy cream, then beat until light and fluffy.
- Pipe a generous swirl of vanilla buttercream onto each cooled cupcake.
- Place one chocolate-dipped strawberry on top of each cupcake.
- Drizzle melted chocolate over the frosting and strawberries for a bakery-style finish.
