- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1/2 cup hot brewed coffee
- 1 teaspoon vanilla extract
- 2 cups sweet cherries, pitted
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water
- 1 1/2 cups heavy whipping cream
- 4 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Grease and line an 8-inch round cake pan with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat the eggs, granulated sugar, brown sugar, oil, buttermilk, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and stir just until combined.
- Slowly mix in the hot coffee until the batter is smooth.
- Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a saucepan over medium heat, combine the cherries, sugar, and lemon juice.
- Stir together the cornstarch and water, then add it to the cherries. Cook for 2 to 3 minutes until slightly thickened. Let cool completely.
- In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Add the heavy cream and whip until soft, fluffy peaks form.
- Spread the whipped cream frosting over the cooled cake.
- Spoon the cherry topping over the cream and finish with extra whole cherries on top.
- Slice and serve chilled or at cool room temperature.
