- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped romaine lettuce
- 1/2 cup diced tomatoes
- 1/4 cup shredded cheddar or Mexican blend cheese
- 1/4 cup guacamole
- 1 lime wedge
- For the creamy sauce:
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream or Greek yogurt
- 1 teaspoon lime juice
- 1/2 teaspoon chili powder
- 1 tablespoon water, as needed for drizzling
Instructions
- Cook the white rice according to package directions and set aside.
- Heat olive oil in a skillet over medium heat.
- Add the ground chicken, chili powder, garlic powder, onion powder, paprika, cumin, salt, and black pepper.
- Cook the chicken for 6 to 8 minutes, breaking it up as it browns, until fully cooked.
- In a small bowl, whisk together the mayonnaise, sour cream or Greek yogurt, lime juice, chili powder, and water until smooth and drizzle-ready.
- Add the cooked rice to a serving bowl.
- Arrange the seasoned chicken, chopped romaine, diced tomatoes, shredded cheese, and guacamole over the rice.
- Drizzle the creamy sauce over the top.
- Finish with a lime wedge and serve immediately.

- Swap ground turkey or beef for chicken if preferred.
