  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped romaine lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup guacamole
  • 1 lime wedge
  • For the creamy sauce:
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream or Greek yogurt
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1 tablespoon water, as needed for drizzling

Instructions

  1. Cook the white rice according to package directions and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the ground chicken, chili powder, garlic powder, onion powder, paprika, cumin, salt, and black pepper.
  4. Cook the chicken for 6 to 8 minutes, breaking it up as it browns, until fully cooked.
  5. In a small bowl, whisk together the mayonnaise, sour cream or Greek yogurt, lime juice, chili powder, and water until smooth and drizzle-ready.
  6. Add the cooked rice to a serving bowl.
  7. Arrange the seasoned chicken, chopped romaine, diced tomatoes, shredded cheese, and guacamole over the rice.
  8. Drizzle the creamy sauce over the top.
  9. Finish with a lime wedge and serve immediately.
