Description
A one-pan cheesy smoked sausage and rice skillet with peppers and tomatoes for an easy weeknight dinner.

- 14 ounces smoked sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon tomato paste
- 1 can diced tomatoes with green chilies, 10 ounces
- 1 1/2 cups long grain white rice, uncooked
- 2 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 2 tablespoons chopped parsley, optional
Instructions
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the sliced smoked sausage and cook for 4 to 5 minutes until browned around the edges.
- Stir in the onion, green bell pepper, and red bell pepper. Cook for 4 minutes until softened.
- Add the garlic, paprika, garlic powder, onion powder, oregano, black pepper, and salt. Stir for 30 seconds.
- Mix in the tomato paste and diced tomatoes with green chilies.
- Add the uncooked rice and stir well to coat it in the mixture.
- Pour in the chicken broth and heavy cream, then bring everything to a gentle simmer.
- Reduce the heat to low, cover, and cook for 18 to 20 minutes until the rice is tender.
- Sprinkle the cheddar cheese evenly over the top.
- Cover again for 2 to 3 minutes until the cheese is melted, or place the skillet under the broiler for 1 to 2 minutes for a bubbly golden top.
- Garnish with chopped parsley if desired and serve hot.
Notes
- Use a heavy-bottomed skillet for even cooking.
- Substitute chicken broth with vegetable broth for a vegetarian version.
- Store leftovers in an airtight container for up to 3 days.
