Description

A one-pan cheesy smoked sausage and rice skillet with peppers and tomatoes for an easy weeknight dinner.


Ingredients

  • 14 ounces smoked sausage, sliced into rounds
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon tomato paste
  • 1 can diced tomatoes with green chilies, 10 ounces
  • 1 1/2 cups long grain white rice, uncooked
  • 2 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped parsley, optional

Instructions

  1. Heat the olive oil in a large oven-safe skillet over medium heat.
  2. Add the sliced smoked sausage and cook for 4 to 5 minutes until browned around the edges.
  3. Stir in the onion, green bell pepper, and red bell pepper. Cook for 4 minutes until softened.
  4. Add the garlic, paprika, garlic powder, onion powder, oregano, black pepper, and salt. Stir for 30 seconds.
  5. Mix in the tomato paste and diced tomatoes with green chilies.
  6. Add the uncooked rice and stir well to coat it in the mixture.
  7. Pour in the chicken broth and heavy cream, then bring everything to a gentle simmer.
  8. Reduce the heat to low, cover, and cook for 18 to 20 minutes until the rice is tender.
  9. Sprinkle the cheddar cheese evenly over the top.
  10. Cover again for 2 to 3 minutes until the cheese is melted, or place the skillet under the broiler for 1 to 2 minutes for a bubbly golden top.
  11. Garnish with chopped parsley if desired and serve hot.
