Ingredients

  • 1 tablespoon olive oil
  • 18 to 20 fully cooked beef or Italian-style meatballs
  • 8 ounces sliced mushrooms
  • 1/2 small yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 3 cups marinara sauce
  • 1/2 cup water or pasta water
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the rigatoni in salted water according to the package directions until just al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the meatballs and cook for 4 to 5 minutes, turning occasionally, until heated through and lightly browned.
  4. Add the mushrooms and onion to the skillet and cook until softened, about 4 minutes.
  5. Stir in the garlic and cook for 30 seconds.
  6. Pour in the marinara sauce and water, then stir in the Italian seasoning, salt, black pepper, and crushed red pepper flakes.
  7. Add the cooked rigatoni and toss until evenly coated in the sauce.
  8. Sprinkle the mozzarella and Parmesan cheese over the top.
  9. Cover and cook on low for 3 to 5 minutes, or until the cheese is melted and bubbly.
  10. Garnish with chopped parsley and serve hot.
