Description
A flavorful and healthy dinner featuring blackened chicken drumsticks with baked sweet potatoes and sautéed peppers and onions.

- 8 chicken drumsticks
- 1 tbsp olive oil
- 1 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme (or Italian seasoning)
- 1/2 tsp cayenne (optional)
- 1 1/4 tsp salt
- 1/2 tsp black pepper
- 4 medium sweet potatoes
- 1 tsp olive oil (optional)
- Pinch of salt
- 1 green bell pepper, sliced
- 1 large red onion, sliced
- 8 oz mushrooms, sliced
- 2 tbsp olive oil (or 1 tbsp oil + 1 tbsp butter)
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 425°F. Pierce sweet potatoes with a fork. Rub with a little oil and a pinch of salt (optional). Bake 40–50 minutes until very tender.
- Pat drumsticks dry. Toss with olive oil, paprika, garlic powder, onion powder, thyme, cayenne (if using), salt, and pepper.
- Place drumsticks on a foil-lined sheet pan. Bake at 425°F for 35–40 minutes, flipping halfway, until browned and cooked through (165°F). Broil 1–2 minutes for extra char if desired.
- Heat oil in a large skillet over medium-high heat. Add peppers, onions, and mushrooms. Cook 8–10 minutes until softened and lightly browned. Add garlic the last 30 seconds. Season with salt and pepper.
- Split sweet potatoes open and fluff the inside. Plate with drumsticks and a scoop of sautéed peppers, onions, and mushrooms.
Notes
- For an air fryer option, cook the chicken at 400°F for 18–22 minutes, turning halfway.
- Adjust cayenne to control spiciness.
