- 4 large red bell peppers, halved and seeded
- 1 lb ground beef
- 1 cup cooked white rice
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F. Lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Stir in garlic, paprika, Italian seasoning, salt, and black pepper.
- Add tomato sauce and cooked rice; mix until fully combined.
- Arrange bell pepper halves cut-side up in the baking dish.
- Spoon beef mixture evenly into each pepper.
- Cover loosely with foil and bake for 30 minutes.
- Remove foil and bake an additional 10–15 minutes until peppers are tender and tops are slightly caramelized.
- Garnish with fresh parsley and serve warm.

- Choose firm, evenly shaped bell peppers for even cooking.
- Adjust seasoning to taste.
- Leftovers can be refrigerated for up to 3 days.
