  • 1/4 cup vegetable oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef chunks and sear until browned on all sides.
  3. Stir in onion and garlic; cook until softened.
  4. Add carrots and potatoes, stirring to combine.
  5. Season with paprika, cumin, salt, and black pepper.
  6. Rinse rice and spread evenly over the meat and vegetables without stirring.
  7. Carefully pour in beef broth or water, covering the rice.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until rice is cooked and liquid is absorbed.
  9. Remove from heat, fluff gently, garnish with fresh parsley, and serve hot.
