- 2 lbs beef chuck or stew meat, cut into chunks
- 3 cups long-grain white rice
- 2 medium carrots, diced
- 1 large onion, diced
- 2 medium potatoes, diced
- 4 cups beef broth or water
- 1/4 cup vegetable oil
- 1 tablespoon garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add beef chunks and sear until browned on all sides.
- Stir in onion and garlic; cook until softened.
- Add carrots and potatoes, stirring to combine.
- Season with paprika, cumin, salt, and black pepper.
- Rinse rice and spread evenly over the meat and vegetables without stirring.
- Carefully pour in beef broth or water, covering the rice.
- Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until rice is cooked and liquid is absorbed.
- Remove from heat, fluff gently, garnish with fresh parsley, and serve hot.
Notes
- Use beef chuck or stew meat for the best flavor and tenderness.
- Do not stir the rice once you add the liquid to prevent mushiness.
- Adjust salt and spices to your preference.
