A hearty and flavorful beef meatballs recipe served with yellow rice, perfect for a comforting family dinner.

- 1 1/2 lbs ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg
- 2 tablespoons olive oil
- 2 cups long-grain white rice
- 1 tablespoon vegetable oil
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 3 cups chicken broth or water
Instructions
- In a large bowl, mix ground beef, breadcrumbs, onion, garlic, parsley, paprika, red pepper flakes, salt, pepper, and egg until combined.
- Roll mixture into evenly sized meatballs.
- Heat olive oil in a skillet over medium heat and brown meatballs on all sides until cooked through, about 10–12 minutes. Remove and set aside.
- For the rice, heat oil in a pot over medium heat. Add rice, turmeric, garlic powder, and salt; stir to coat.
- Pour in chicken broth, bring to a boil, then cover and reduce heat to low. Simmer 15–18 minutes until rice is tender.
- Fluff rice with a fork and plate generously.
- Top yellow rice with meatballs and spoon pan juices over the top.
- Garnish with extra parsley and serve warm.
Notes
- Use lean ground beef for a lighter version.
- Adjust red pepper flakes for more or less heat.
