Description
Healthy banana oatmeal chocolate chip cookies made with simple ingredients. Perfect for breakfast or a snack.
Ingredients
Scale
- 2 ripe bananas, mashed (about 1 cup)
- 1 3/4 cups old-fashioned rolled oats
- 1/4 cup creamy peanut butter (or almond butter)
- 2 Tbsp maple syrup or honey (optional, for extra sweetness)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup mini chocolate chips (plus a few for topping)
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, mash bananas until mostly smooth. Stir in peanut butter, maple syrup (if using), and vanilla.
- Add oats, cinnamon, baking powder, and salt. Mix until combined, then fold in chocolate chips.
- Scoop 2-tablespoon mounds onto the baking sheet and gently flatten into cookie shapes (they won’t spread much). Press a few extra chips on top.
- Bake 10–12 minutes until set and lightly golden on the bottoms.
- Cool on the pan for 5 minutes, then transfer to a rack to finish cooling.
Notes
- Store in an airtight container for up to 3 days.
- For a vegan version, use maple syrup instead of honey.
